HP is the base value. Individual zombies can have a random HP modifier; armor and regeneration also affect how hard they are to kill.
How to approach the fight
A screamer can call more zombies. Deal with it promptly before the encounter grows. Activity around your base can attract scouts, so watch the surroundings during long work sessions.
Radiated variants regenerate health. Focus damage on one target; long gaps between hits can prolong the fight. A Rad Remover modification can temporarily suppress regeneration.
