Coffee improves stamina regeneration, not running speed. While water is being absorbed, either coffee adds 10% to the water bonus of 15%, for 25% combined. Regular and blackstrap coffee replace each other; their strengths do not add together.

Blackstrap Coffee

Another serving extends the remaining duration, not the strength. Iron Gut can extend these food and drink effects by up to 50%. The time above is the base duration without that perk.

Stamina regeneration while absorbing water

Absorbing water grants +15% stamina regeneration. Its duration depends on the water still being absorbed, your hydration and earlier drinks. It is not tied to the fixed timer of another drink bonus.
